SANTO WINES WINERY

The new winery was completed in 1992 in the village of Pyrgos, in a wonderful location on the caldera. Today, we are proud because in one of the most state-of-the-art wineries in Greece technological perfection harmonizes wonderfully with the landscape uniqueness of our island. Its innovative architecture is remarkable, as it is built on different levels, just as the famous so- called "terraces" of the vineyard, i.e. the different levels that the farmers have developed in the farms, in order to facilitate the cultivation of the land.

During the wine making process (from receiving the grapes until bottling) we utilize the physical phenomenon of gravity which replaces the use of pumps for the transfer of the must and the wine in order to upgrade the quality of the wines produced.

Our winery has a capacity of 4,000 tons and is constantly upgraded by investing in new equipment ensuring we always use cutting edge technology in production.

In the cellars of the winery, we reserve the largest collection of wines, white, red and Vinsanto that mature in oak barrels.

“SANTO” THE TOMATO PROCCESS FACTORY

The cultivation of tomatoes in Santorini started in the late 18th century. Initially its processing was just domestic but later on, it developed to industrial because of the unique characteristics and the high quality of the Santorini tomato paste that became famous and was established in the markets. Back in 1925, the importance of tomato cultivation was so great that nine tomato processing factories were operating in the island.

In 1952 the Union of Santorini Cooperatives built the tomato processing factory "SANTO" in the area of Monolithos Village, which today is the only one that operates in the island.

Its beautiful architecture is still preserved after the restoration and renovation that was implemented in 2015, utilizing funding from the European Union. SANTO continues to produce high quality gourmet products from Santorini Tomato PDO and to create innovative new products promoting the uniqueness of the local products to consumers who seek authentic flavors.

In the same building there is a separate division for the process and packaging of Santorini Fava PDO, capers, caper leaves and other traditional deli products.
